Abbeydale Brewery Co-Lab® London Dry Gin

When Abbeydale Brewery approached us to make a collaborative gin with them, we naturally started talking about making a hopped gin.

Picking an Abbeydale beer to give us a staring direction ensued, but we quickly realised that wouldn’t work as we each had multiple faves. So we took the hops from three of them (Willamette, Mosaic and Nelson Sauvin) and cold distilled small batches to avoid any bitter flavours, concentrating instead on delicate, almost floral notes.

The results were amazing, and we think our vacuum distilled hopped gin is the first of its kind. Mosaic – from Heathen – stood out, so we took other profiles from the beer. Cold distilled pink grapefruit, and papaya were added to the blend, to balance the hops, and five other traditional botanicals.
